In 2022, our company collaborated with Maxigourmet, a Bergamo-based company known for producing sauces, ready meals, and mayonnaise-based salads. Maxigourmet, a leader in the food industry, builds its philosophy on three core values: taste, quality, and tradition. To meet their production needs, we designed, manufactured, and supplied an all-in-one multi-purpose vacuum cooker, 100% made in Italy, with a 500-liter capacity.
Designing the Multi-Purpose Vacuum Cooker
Our attention to detail allowed us to accurately interpret the client’s needs, designing a tailor-made solution that meets their production volume, efficiency, and specific requirements. The final layout of the system was optimized to maximize the available space without compromising functionality.
ProCut is designed to be an extremely versatile machine, capable of performing a variety of functions: cutting, mixing, vacuum concentration, homogenization, and cooling. This makes it suitable for various applications in the food industry and beyond, from preserves to confectionery and dairy products.
Technical Features of the Sauce and Condiment Cooker
The ProCut series enables industrial production of creamy products such as sauces, jams, and creams in a single work cycle. Here are some of its key technical features:
- Tank capacity: 500 liters
- Heating and cooking: Up to 120°C with a steam jacket or direct injection
- Vacuum cooking: With condensation at 50°C to preserve the organoleptic properties of the ingredients
- Mixing: Three agitators—one at the bottom, one on the side, and one under the lid
- Cutting: Three double-toothed blades
- Discharge: Through a valve located at the bottom of the tank
- Washing system: Recirculation cleaning for piping, tank, condenser, and all product-contact surfaces
- Machine control: Industrial PC with a 15″ touch-screen interface, allowing adjustable and storable parameters for each recipe
